Blue Cat Makes Some “Mac” & Cheese

Blue Cat made lunch for family today – one of their favorites. That would be macaroni and cheese – something Blue Cat’s family usually has on Sundays. But this Sunday was different…

Blue Cat is visiting My in Utah and discovered that they didn’t have any elbow noodles. And it’s kind of hard to make “Mac & Cheese” without the “Mac” part. But there was a solution – home made noodles! So here’s what he did:

First – the pasta dough: one cup of flour with two eggs, a quarter cup of milk, and some salt.

Stirred together it makes a very sticky dough.

The next step was really hard – changing the lump of dough into noodles to boil in water. Blue Cat tried a lot of different ways to make the noodles – pressing the dough through a colander, dropping dough in from a spoon, putting the dough in with his fingers (well, his scribe’s fingers) – and finally got all of it into the water. Three minutes later (and some serious stirring/cutting with a spatula) ensured that all the noodles were cooked and about the right size. Small lumps cooked completely through.

(By the way – this recipe is actually for a German egg noodle called spatzle.)

After that Blue Cat just added his regular cheese sauce. The recipe for each cup of sauce – melt 1/4 cup butter, sauté 1/4 cup flour and a bit of salt in it for 2 minutes, add 1 cup milk and stir until it thickens, and then add shredded cheese until it’s cheesy enough.

(Blue Cat recommends 2 cups of sauce for 3 flour cups worth of noodle mix – more sauce if you like a lot of sauce.)
