Blue Cat Makes Noodles & Corn

Tonight Blue Cat made a scribe-family secret recipe – Noodles & Corn. Blue Cat is bad at keeping secrets, though, so here’s how he did it:

First – start some salted water boiling to cook some noodles…

The water takes a while to come to a boil in Colorado, so that’s why Blue Cat starts it first. Then add a pound of egg noodles to the water when it’s boiling…

IMG_0558Now chop an onion and get 2 pounds of ground meat ready to cook…

IMG_0555Cook the onion first in a little olive oil – it should be mostly translucent (see-through) and starting to brown…

IMG_0556Then add the meat and some salt (Blue Cat likes his salt)…

IMG_0569… and cook until the meat is brown and the onions are caramelized (browned so the sugar in the onion is starting to convert to caramel)…

IMG_0570While the meat is cooking the noodles should be done, so drain them and set them aside. Open two 15 ounce cans of diced tomatoes and two 15 ounce cans of corn.

IMG_0559Keep the tomato juice, but drain the corn since the water it’s packed in is not very tasty – you can use the can lid as a strainer…

IMG_0564IMG_0565… and then add the noodles and vegetables to the meat.

IMG_0571Stir to mix, add some cumin (start with a teaspoon unless you really like cumin)…

IMG_0573… and then simmer it for a bit (Blue Cat thinks 10 minutes is enough) so the flavors get all mixed up…

IMG_0574Then it’s time to eat! Blue Cat says that you should have a salad with the Noodles & Corn so you get enough vegetables, and to drink enough water (especially if you live in Colorado) …

Blue Cat’s Noodles & Corn

Ingredients

  • 1 pound egg noodles
  • 1 onion – diced
  • 1 tablespoon olive oil
  • 2 pounds ground meat (beef is good unless you’re worried about methane)
  • Salt to taste
  • 2 15 oz cans diced tomatoes (undrained)
  • 2 15 oz cans corn (drained)
  • 1 teaspoon cumin

Directions

  • Cook noodles according to the package directions; drain
  • Cook diced onion in olive oil until translucent
  • Add meat and cook until meat is brown (no pink)
  • Add diced tomatoes and corn and noodles
  • Stir; add cumin and stir a lot more
  • Simmer for 10 minutes
  • Enjoy!
